Students will work in a professional pastry kitchen producing pastry items that will be used in the college restaurant and Tollbooth Café provision. Using professional equipment, ingredients and modern practices, students will work on a range of items from breads, yeast goods, pastry products, sweets and desserts. All work will be assessed to industry standards and will be certificated – units to be confirmed.Pupils will work towards Skills for Work Units (Intermediate1). (2008) |
